Introduction
Pepsin (PEP) is an enzyme belonging to endopeptidases and is present in human and many species of animal gastric juice. PEP is secreted by the gastric mucosa as the inactive proenzyme – PGN, which under acidic conditions, or under the influence of PEP itself (the autoactivation) passes in an active form.
Principle
